Collagen Boosting Roasted Pumpkin Seed Recipes

Fall is here and it's time to carve our Halloween pumpkins for the porch - but don't throw out those precious seeds! They're your new favorite beauty secret.

Did you know that pumpkin seeds have many benefits and are an amazing source of zinc.  Zinc acts like a helper for your body to create collagen; and so pumpkin seeds are one of the best food sources you can add to your diet - they will give your body a head start for producing collagen.

As you can see, we're big fans of pumpkin seeds. Learn how to make your own roasted pumpkin seeds with these three delicious and nutritious recipes: cinnamon-sugar, turmeric, and smoky, spiced BBQ. 


Cinnamon-Sugar Roasted Pumpkin Seeds Recipe

INGREDIENTS

  • 2 cups raw pumpkin seeds
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

DIRECTIONS

  1. Preheat oven to 350F degrees and place oven rack on center position
  2. As the oven heats, heat butter in the microwave in 20-second intervals until it's fully melted
  3. In a small bowl, toss pumpkin seeds in melted butter to coat them
  4. Toss pumpkin seeds with cinnamon and sugar to coat them
  5. Spread the seeds out on a parchment-lined baking sheet
  6. Roast the seeds for 25 to 27 minutes, or until lightly golden


Turmeric Roasted Pumpkin Seeds Recipe

INGREDIENTS

  • 1 cup raw pumpkin seeds
  • 1 teaspoon oil (we used extra virgin olive oil)
  • 1 teaspoon turmeric
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper
  • 1/8 teaspoon hot sauce (we used sriracha)

DIRECTIONS

  1. Preheat oven to 350F degrees and place oven rack on center position
  2. In a medium bowl toss turmeric, sea salt and fresh ground pepper
  3. Toss oil and hot sauce into the medium bowl and add to the powder mixture
  4. Toss in pumpkin seeds until they mixture has coated completely
  5. Spread the seeds out on a baking sheet
  6. Roast the seeds for 5 to 8 minutes, or until lightly golden - and if the turmeric color makes it hard to see the golden color just roast until slightly plump

Smoky, Spiced BBQ Pumpkin Seeds Recipe

INGREDIENTS:

  • 1 1/2 cups raw pumpkin seeds
  • 1 1/4 teaspoons onion powder
  • 1 1/4 teaspoons garlic powder
  • 1 teaspoon oil (we used extra virgin olive oil)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon light brown sugar

DIRECTIONS:

  1. Preheat oven to 300F degrees and place oven rack on center position
  2. In a small bowl, toss onion powder, garlic powder, mustard, smoked paprika, cayenne, salt and brown sugar
  3. Place the seeds in a separate medium bowl and toss in 1/2 teaspoon of the oil
  4. Toss pumpkin seeds with approximately 3/4 of the spice mixture
  5. Spread the seeds on a parchment lined sheet pan
  6. Roast for 20 to 30 minutes or until brown and crunchy, tossing half way through
  7. Immediately upon removing from the oven, toss another 1/2 teaspoon oil to coat the seeds
  8. Toss the seeds with the remaining 1/4 spice mixture.

Use these delicious roasted pumpkin seeds to sprinkle on your salads or as a standalone snack.  The seeds will stay fresh in an airtight container for about 10 days.
